  2. Make the Crumb Topping: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the cold butter using a fork or pastry cutter until crumbly. Set aside.
  3. Prepare the Cookie Dough:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the egg and vanilla extract until smooth.
    • In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until combined.
  4. Shape Cookies: Scoop about 2 tablespoons of dough for each cookie, roll into a ball, then slightly flatten on the baking sheet.
