- 1 cup (200g) granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
For the Crumb Topping:
- 1/2 cup (100g) light brown sugar, packed
- 1/2 cup (63g) all-purpose flour
- 1 tsp ground cinnamon
- 1/4 cup (57g) unsalted butter, cold and cubed
For the Glaze (optional):
- 1/2 cup (60g) powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat Oven: Set oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Make the Crumb Topping: In a small bowl, combine brown sugar, flour, and cinnamon. Cut in the cold butter using a fork or pastry cutter until crumbly. Set aside.
- Prepare the Cookie Dough:
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into the wet ingredients until combined.
- Shape Cookies: Scoop about 2 tablespoons of dough for each cookie, roll into a ball, then slightly flatten on the baking sheet.
- Add Crumb Topping: Generously sprinkle the prepared crumb topping over each cookie, pressing lightly so it sticks.
- Bake: Bake for 10–12 minutes, or until edges are set but centers are still soft.
- Cool & Glaze: Let cookies cool completely, then drizzle with glaze if desired.
