Ingredients

Main Ingredients
  • 1 container Fresh Pineapple Peeled, cored, and cut into 1-inch chunks
  • 1 teaspoon Coconut Oil Melted
  • 1 tablespoon Brown Sugar Packed
  • 1/2 teaspoon Cinnamon
  • Pinch Salt Optional, to enhance sweetness

Method

Instructions
  1. Prepare the pineapple by ensuring it is cut into uniform 1-inch chunks. Pat the chunks dry with a paper towel to aid in better caramelization.
  2. In a medium bowl, toss the pineapple chunks with the melted coconut oil until evenly coated.
  3. In a separate small bowl, whisk together the brown sugar, cinnamon, and salt.
  4. Sprinkle the sugar-spice mixture over the oiled pineapple chunks and toss gently until all pieces are well-coated.
  5. Preheat your air fryer to 380°F (195°C). Arrange the coated pineapple chunks in a single layer in the air fryer basket, ensuring not to overcrowd it (work in batches if necessary).
  6. Air fry for 8 to 10 minutes, shaking the basket vigorously halfway through (around 5 minutes), until the edges are golden brown and slightly charred.
  7. Remove immediately and serve warm. They are excellent over yogurt, ice cream, or simply enjoyed as is.

Notes

For a tangier flavor, substitute the brown sugar with 1/2 teaspoon of lime zest. Do not overcook, as the pineapple can become dry.
