Ingredients
  

  • 5 pounds apples Granny Smith, Fuji, or a mix
  • 2 cups apple cider or apple juice
  • 1 ½ cups granulated sugar
  • 1 cup brown sugar packed
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • 1 pinch salt

  • Immersion blender (or regular blender)

Method
 

  1. Peel, core, and chop the apples into small pieces.
  2. In a large pot or slow cooker, combine apples, apple cider, sugars, cinnamon, nutmeg, cloves, and salt. Stir well.
  3. Simmer on low heat for about 1 hour, stirring occasionally.
  4. Once apples are soft, blend the mixture using an immersion blender until smooth.
  5. Continue to cook on low heat for another 30-40 minutes, stirring occasionally, until thickened.
  6. Stir in vanilla extract and mix well.
  7. Let cool slightly, then transfer to sterilized glass jars. Store in the fridge for up to 2 weeks or freeze for longer storage.

Notes

For a thicker consistency, let the apple butter cook longer.
Adjust the sweetness by adding more or less sugar.
A mix of tart and sweet apples gives the best flavor balance.
This recipe can be canned using a water bath method for long-term storage.
