  • 3 ripe apricots pitted and finely diced
  • 1/2 cup red onion very finely minced
  • 1 jalapeño pepper seeded and finely minced (adjust to taste)
  • 1/4 cup fresh cilantro chopped
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon honey or agave nectar optional, for extra sweetness
  • 1/4 teaspoon salt or to taste
  • Pinch black pepper

  1. Prepare all vegetables and fruit: Dice the ripe apricots, mince the red onion and jalapeño, and coarsely chop the cilantro.
  2. In a medium non-reactive bowl (glass or ceramic), combine the diced apricots, minced red onion, minced jalapeño, and chopped cilantro.
  3. In a small separate dish, whisk together the fresh lime juice, honey (if using), salt, and black pepper until the salt is dissolved.
  4. Pour the lime juice dressing over the apricot mixture. Gently fold all ingredients together, ensuring everything is lightly coated. Be careful not to mash the apricots.
  5. Taste the salsa and adjust seasoning as needed. You may want more lime juice for tang or a pinch more salt.
  6. For the best flavor integration, cover the bowl and refrigerate the salsa for at least 15 minutes before serving. This allows the flavors to meld.

Notes

This salsa is best consumed within 2 days. If using very firm apricots, allow them to macerate with the lime juice for closer to 30 minutes before serving. It pairs wonderfully with grilled pork tenderloin or white fish like cod or halibut.
