Baked Cranberry Brie Bites - Puff Pastry Appetizer

Ingredients
  

  • 1 sheet frozen puff pastry 9.5 oz / 270g, thawed
  • 1 wheel brie cheese 8 oz / 227g, cut into 24 small pieces
  • 1/2 cup whole berry cranberry sauce store-bought or homemade
  • 1 tablespoon brown sugar optional, for topping
  • 1 large egg beaten, for egg wash
  • pinch fresh rosemary finely chopped, optional, for garnish

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly spray a 24-cup mini muffin tin with non-stick cooking spray, or line it with mini paper liners.
  2. Unroll the thawed puff pastry sheet onto a lightly floured surface. Using a sharp knife or a pizza cutter, cut the pastry into 24 equal squares.

  3. Gently press each puff pastry square into the cups of the prepared mini muffin tin, allowing the corners to slightly extend over the edges.
  4. Place one small piece of brie cheese into the center of each puff pastry square. Top the brie with about 1 teaspoon of cranberry sauce.

  5. If desired, sprinkle a tiny pinch of brown sugar over each cranberry bite.

  6. In a small bowl, lightly beat the egg. Using a pastry brush, gently brush the exposed edges of the puff pastry with the beaten egg.

  7. Bake for 15-18 minutes, or until the puff pastry is golden brown and puffed up, and the brie cheese is melted and bubbling.
  8. Carefully remove the muffin tin from the oven. Let cool for a few minutes before transferring to a serving platter. Garnish with fresh rosemary if desired, and serve warm.

Notes

For best results, ensure your puff pastry is cold but pliable. Don't overfill the pastry cups to prevent spillage. These bites are most delicious when served warm.
