  • 1 teaspoon salt

  • Bamboo skewers soaked in water for at least 30 minutes (to prevent burning)
For the Bang Bang Sauce:
  • ½ cup mayonnaise (full-fat recommended for creaminess)
  • ¼ cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your spice preference)
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
For Garnish (Optional):
  • Chopped fresh cilantro
  • Toasted sesame seeds
  • Sliced green onions

Method
 

  1. 1. Prepare the Chicken: In a medium bowl, combine the cubed chicken with cornstarch, salt, and black pepper. Toss well until the chicken pieces are evenly coated. The cornstarch will help create a slightly crispy exterior and tender interior.

  2. 2. Thread the Skewers: Thread the seasoned chicken pieces onto the pre-soaked bamboo skewers. Aim for 4-5 pieces per skewer, leaving a small space between each piece to ensure even cooking. Arrange the prepared skewers on a plate.

  3. 3. Cook the Chicken: Heat the olive oil in a large skillet or grill pan over medium-high heat. Once hot, add the chicken skewers in batches, ensuring not to overcrowd the pan. Cook for 3-4 minutes per side, or until the chicken is golden brown and cooked through, with an internal temperature of 165°F (74°C). Alternatively, grill them over medium heat for the same duration.

  4. 4. Prepare the Bang Bang Sauce: While the chicken is cooking, prepare the signature Bang Bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, rice vinegar, honey (or maple syrup), and sesame oil until smooth and well combined. Taste and adjust the sriracha if you desire more heat, or honey for more sweetness.

    • Option 2 (Toss): For maximum coverage, gently toss the hot chicken skewers in a large bowl with the sauce until every piece is coated.
