Method
- In a medium bowl, combine the shredded cooked chicken with 1/2 cup of your favorite BBQ sauce. Stir well to ensure all the chicken is evenly coated. If you like a little extra zing, feel free to add a splash more BBQ sauce to your liking.1.5 cups cooked shredded chicken, 1/2 cup your favorite BBQ sauce
- Lay out the four slices of bread. On two of the slices, evenly distribute the shredded cheddar cheese (or your cheese blend). Top the cheese with the BBQ chicken mixture, spreading it out to create a substantial layer. If using, scatter the thinly sliced red onion over the chicken. Finally, top the chicken and onion with the shredded mozzarella cheese. Place the remaining two slices of bread on top to complete the sandwiches.4 slices your favorite bread, 1 cup shredded cheddar cheese, 1.5 cups cooked shredded chicken, 1/4 cup thinly sliced red onion, 1/2 cup shredded mozzarella cheese
- Spread half of the softened butter evenly across the top side of each assembled sandwich. This butter will create that irresistible golden-brown crust and help achieve a perfectly crispy exterior.2 tablespoons unsalted butter
- Heat a large skillet or griddle over medium heat. Once hot, carefully place the sandwiches, butter-side down, into the skillet.
- While the first side is grilling, spread the remaining softened butter on the now-exposed top side of each sandwich.2 tablespoons unsalted butter
- Grill the sandwiches for 3-5 minutes per side, or until the bread is beautifully golden brown and toasted, and the cheese is completely melted and gooey. Keep an eye on the heat to prevent burning; you may need to adjust it slightly.
- Once perfectly grilled, carefully remove the sandwiches from the skillet. Let them cool for just a minute before slicing them in half. Serve immediately with extra BBQ sauce for dipping and sliced dill pickles on the side for that classic barbecue pairing.1/2 cup your favorite BBQ sauce, sliced dill pickles
Notes
To store any leftover BBQ Chicken Grilled Cheese, allow the sandwiches to cool completely at room temperature before wrapping them tightly in plastic wrap or placing them in an airtight container. They can be refrigerated for up to 2 days. The bread may soften slightly upon refrigeration.
To reheat, the best method for maintaining crispness is to place the sandwich in a preheated skillet or on a griddle over medium-low heat. Cook for 3-4 minutes per side, or until the cheese is melted and the bread is re-toasted. Alternatively, you can reheat them in a toaster oven or a conventional oven preheated to 350°F (175°C) for about 5-7 minutes. Freezing is generally not recommended for the best texture, as the bread can become soggy upon thawing.
