Ingredients

Dip Base
  • 1 package (5.2 oz) Boursin Garlic & Fine Herbs cheese
  • 8 oz cream cheese softened
  • 1/4 cup sour cream
Bruschetta Topping
  • 2 large roma tomatoes seeds removed and diced small
  • 1/4 cup fresh basil leaves chiffonade
  • 2 cloves garlic minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper

Method

Instructions
  1. In a medium bowl, combine the softened cream cheese and the Boursin cheese. Use a hand mixer or a sturdy spatula to mix until the ingredients are completely smooth and well combined.
  2. Fold in the sour cream until the dip base achieves a light, fluffy, and consistent texture. Taste and add a small pinch of salt if necessary, remembering the Boursin is already seasoned.
  3. Prepare the bruschetta topping: In a separate small bowl, gently toss together the diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, and pepper.
  4. Allow the bruschetta topping mixture to rest for about 5-10 minutes at room temperature to let the flavors meld.
  5. To serve, spread the Boursin cheese base evenly onto a shallow serving plate or into a decorative bowl.
  6. Gently spoon the tomato mixture over the cheese base, leaving a small border and making sure to drain off any excess liquid before topping.
  7. Sprinkle the fresh basil chiffonade over the top of the dip. Serve immediately with toasted baguette slices, crostini, or sturdy crackers.

Notes

For the best flavor, ensure the cream cheese is fully softened before mixing. If making ahead, prepare the cheese base and the topping separately and combine just before serving to prevent the tomatoes from making the dip watery.
