- In a medium mixing bowl, add the rolled oats, protein powder, and a pinch of salt. Stir gently to combine, ensuring the protein powder is evenly distributed amongst the oats.1 cup rolled oats, 1/4 cup protein powder, 1 Pinch salt
- To the dry ingredients, add the almond butter, honey (or maple syrup), melted butter, vanilla extract, and butterscotch flavoring extract (if using).1/2 cup almond butter, 1/3 cup honey, 2 tablespoons unsalted butter, 1 teaspoon vanilla extract, 1/2 teaspoon butterscotch flavoring extract
- Using a spatula or a sturdy spoon, begin to mix all the ingredients together. Continue mixing until a thick, cohesive dough forms. It should be moist enough to hold its shape but not excessively sticky. If the mixture seems too dry, add another teaspoon of melted butter or a tiny splash of water. If it’s too wet, add a tablespoon more of oats or protein powder.
- For easier rolling, cover the bowl with plastic wrap and place it in the refrigerator for about 15-20 minutes. This allows the ingredients to firm up slightly.
- Once chilled (or if you prefer not to chill), scoop out portions of the dough using a tablespoon or a small cookie scoop. Roll each portion between your palms to form uniform balls, about 1-inch in diameter.
- Your Best Butterscotch Protein Balls are ready to be enjoyed immediately!
Notes
Store in an airtight container in the refrigerator for up to 1 week. Can be frozen for 2-3 months.
