Ingredients
  

  • 1.5 lbs sirloin steak (or your favorite cut for steak bites) cut into 1-inch cubes
  • 1.5 lbs baby potatoes such as Yukon Gold or red potatoes, halved or quartered if large
  • 4 tablespoons olive oil divided
  • 6 cloves garlic minced, divided
  • 2 tablespoons butter
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste freshly ground black pepper

Method
 

  1. Preheat your oven to 400°F (200°C). In a large bowl, toss the halved or quartered baby potatoes with 2 tablespoons of olive oil, 1 teaspoon of minced garlic, dried rosemary, dried thyme, smoked paprika, salt, and pepper. Spread the seasoned potatoes in a single layer on a large baking sheet.

  2. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the potatoes are fork-tender and begin to turn golden brown and crispy.
  3. While the potatoes are roasting, pat the steak cubes dry with paper towels. Season generously with salt and freshly ground black pepper. In a separate bowl, toss the steak bites with 1 tablespoon of olive oil and 1 teaspoon of minced garlic.

  4. Heat the remaining 1 tablespoon of olive oil and the butter in a large oven-safe skillet (cast iron works beautifully here) over medium-high heat. Once the butter is melted and sizzling, add the steak bites in a single layer. Sear for 2-3 minutes per side, until beautifully browned. Avoid overcrowding the skillet; cook in batches if necessary.

  5. Once the steak bites are seared on all sides, add the remaining 3 teaspoons of minced garlic to the skillet and stir for about 30 seconds until fragrant. If you used oven-safe skillet, transfer the skillet to the oven with the potatoes for the last 5 minutes of potato cooking time, allowing the steak to finish cooking and the flavors to meld. If your skillet is not oven-safe, simply remove the steak from the heat and let it rest in the pan.

  6. Once the potatoes are roasted and the steak bites are cooked to your desired doneness, carefully remove the skillet from the oven. Add the seared steak bites to the baking sheet with the roasted potatoes, or add the roasted potatoes to the skillet with the steak. Toss gently to combine everything.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Can be frozen for 2-3 months. Reheat in a skillet with oil/butter or in the oven. Microwave is an option but may reduce crispness.
