  • 3 medium Peaches Ripe, diced
  • 1/2 cup Red Onion Finely minced
  • 1 large Jalapeño Seeds removed and minced (adjust to taste)
  • 1/4 cup Fresh Cilantro Chopped
  • 1 small Lime Juice of
  • 1/4 teaspoon Salt Or to taste
  • 1/8 teaspoon Black Pepper

Method
 

Instructions
  1. Gently wash and dice the fresh peaches into small, uniform pieces (about 1/4 inch cubes).
  2. Finely mince the red onion. For a milder flavor, you can soak the minced onion in cold water for 5 minutes, then drain well.
  3. Carefully mince the jalapeño. For less heat, ensure all white pith and seeds are fully removed before chopping.
  4. In a medium mixing bowl, combine the diced peaches, minced red onion, minced jalapeño, and chopped cilantro.
  5. Squeeze the juice from the fresh lime over the mixture. Add the salt and black pepper.
  6. Gently fold all ingredients together until everything is evenly coated with the lime juice. Taste and adjust seasonings, adding more salt or lime juice if necessary.
  7. Cover the bowl and refrigerate the salsa for at least 15 minutes to allow the flavors to meld before serving.

Notes

This salsa is best served cold or at room temperature. It pairs wonderfully with grilled pork chops or sprinkled over avocado toast. If peaches are not in season, quality frozen peaches (thawed and drained) can be substituted, but the texture will be slightly softer.
