Method
 

  1. In a large mixing bowl, beat the softened unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

  2. Beat in the large eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

  3. In a separate medium bowl, whisk together the all-purpose flour, baking powder, and salt.

  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  5. Divide the dough in half, flatten each half into a disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes (or up to 2 days). Chilling the dough makes it easier to roll and cut.
  6. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disc of chilled dough to about ¼-inch thickness. Use your favorite Valentine's Day cookie cutters (hearts, lips, X's, O's) to cut out shapes.
  8. Carefully transfer the cut cookies to the prepared baking sheets, leaving about 1 inch of space between them. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. While the cookies are cooling, make the frosting. In a medium bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with the milk (or cream) and vanilla extract, beating until smooth and spreadable.

  11. Divide the frosting into separate bowls and tint with red and pink food coloring to achieve your desired shades.

  12. Once the cookies are completely cool, spread or pipe the frosted sugar cookies with the colorful frosting. Add Valentine's Day sprinkles if desired. Let the frosting set before serving or stacking.

Notes

Store cooled and decorated cookies in an airtight container at room temperature for up to 3-4 days. Unfrosted cookies can be frozen for up to 2-3 months.
