Blackberry Sage Concentrate
  • 1 cup fresh or frozen blackberries
  • 1/2 cup water
  • 1/4 cup granulated sugar Adjust to taste
  • 5 large fresh sage leaves
Tea & Assembly
  • 2 bags black tea (like Earl Grey or English Breakfast) Or 2 tsp loose leaf
  • 1 cup boiling water
  • 1 1/2 cups milk (dairy or non-dairy) Oat milk recommended for creaminess
  • To taste ice cubes

Method

  1. Prepare the Blackberry Sage Concentrate: Combine blackberries, 1/2 cup water, sugar, and sage leaves in a small saucepan.
  2. Simmer the concentrate mixture over medium heat for about 8-10 minutes, stirring occasionally until the berries have broken down and the liquid has reduced slightly. Remove from heat.
  3. Strain the concentrate: Pour the mixture through a fine-mesh sieve into a bowl, pressing firmly on the solids with a spoon to extract all the liquid. Discard the solids. Set the concentrate aside to cool slightly.
  4. Brew the Tea: Place tea bags in a heatproof measuring cup. Pour 1 cup of boiling water over the tea bags and steep for 4 minutes. Remove the tea bags and let the strong tea cool to room temperature.
  5. Assemble the Lattes: In two tall glasses filled with ice, divide the cooled blackberry sage concentrate evenly (about 2-3 tablespoons per glass).
  6. Pour the cooled black tea concentrate evenly over the ice in both glasses. Top each glass with cold milk and stir gently to combine the layers before serving immediately.

Notes

For a stronger herbal flavor, lightly bruise the sage leaves before adding them to the simmering liquid. If using frozen blackberries, you may need to simmer an extra 2 minutes. This recipe yields enough syrup for 2 large lattes or 3 smaller servings.
