Ingredients
  

  • 1 cup Blueberries (Fresh or Frozen) Mashed
  • 1/2 cup Unsweetened Coconut Milk (Full-Fat) Liquid
  • 2 tablespoons Unsweetened Shredded Coconut Chopped finely
  • 1 tablespoon Chia Seeds Whole
  • 1 tablespoon Gelatin Powder (Unflavored) Powder
  • 1/4 cup Water Room Temperature

Equipment

  • Small Bowl
  • Fork or potato masher
  • Small Saucepan
  • Silicone molds for dog treats or small baking dish
  • Parchment paper (if using baking dish)

Method
 

  1. In a small bowl, sprinkle the gelatin powder over the 1/4 cup of room temperature water. Let it sit for 5-10 minutes until it forms a gel-like consistency.

  2. In a separate bowl, mash the blueberries thoroughly. You can use a fork or potato masher to ensure they are well broken down.

  3. Add the mashed blueberries, unsweetened coconut milk, finely chopped shredded coconut, and chia seeds to the bowl with the bloomed gelatin. Stir everything together until well combined.

  4. Pour the mixture into a small saucepan. Heat over low to medium-low heat, stirring continuously, for about 5-7 minutes. The goal is to gently warm the mixture until it becomes smooth and slightly thickened, without boiling. You should see the gelatin fully dissolve and the mixture become uniform in color.
  5. Remove the saucepan from the heat. Carefully pour the warm mixture into silicone molds designed for dog treats or a small, shallow baking dish lined with parchment paper.
  6. Place the filled molds or dish into the refrigerator. Allow the treats to chill and set completely, which typically takes at least 2-3 hours, or until they are firm to the touch.
  7. Once firm, carefully remove the gummy treats from the molds. If using a baking dish, cut the set mixture into small, bite-sized squares.

Notes

Store in an airtight container. Fresh for 5-7 days in the refrigerator. Can be frozen for longer storage.
