Ingredients
  

Flatbread Base
  • 2 pieces Naan or pre-made flatbread Store-bought or homemade
  • 1 tablespoon Extra virgin olive oil
Toppings
  • 4 ounces Goat cheese Softened to room temperature
  • 1 cup Fresh blueberries Rinsed and dried
  • 1/4 cup Red onion Thinly sliced
  • 1 teaspoon Fresh thyme Leaves only
Mint Honey Drizzle
  • 3 tablespoons Honey Wildflower or Clover preferred
  • 2 tablespoons Fresh mint leaves Finely chiffonaded
  • 1/4 teaspoon Crushed red pepper flakes Optional for heat

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Place the flatbreads on the prepared baking sheet and lightly brush the tops with olive oil.
  3. Spread the softened goat cheese evenly across the flatbreads, leaving a small border at the edges. Top with sliced red onions and fresh blueberries, pressing the berries slightly into the cheese so they stay in place.
  4. Bake for 8 to 10 minutes, or until the flatbread edges are golden brown and the blueberries have just begun to burst and release their juices.
  5. While the flatbread is baking, whisk together the honey, chopped mint, and red pepper flakes in a small bowl.
  6. Remove the flatbreads from the oven and immediately drizzle generously with the mint honey mixture. Garnish with fresh thyme and extra mint if desired.
  7. Slice into wedges or rectangles and serve warm.

Notes

For an extra layer of flavor, try adding a handful of fresh arugula on top after baking. If blueberries are out of season, blackberries or sliced figs make an excellent substitute.
