- Prepare the Blueberry Syrup: Combine blueberries, 0.5 cup water, and sugar in a small saucepan.
- Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves and the blueberries have softened (about 5-7 minutes). Lightly mash the berries with a spoon.
- Strain the syrup through a fine-mesh sieve into a small bowl, pressing down on the solids to extract all the liquid. Discard the solids. Let the syrup cool completely.
- Assemble the Drinks: In four tall glasses, divide the cooled blueberry syrup evenly (about 2 tablespoons per glass, or adjust to desired sweetness).
- Add ice cubes to each glass. Pour 1/4 cup of fresh lemon juice into each glass.
- Top each serving with cold sparkling water or club soda. Stir gently to combine the layers.
- Garnish each drink with fresh blueberries and a slice of lemon before serving immediately.
Notes
This recipe makes a concentrate syrup that can be stored in the refrigerator for up to one week. For an adult version, add 1 oz of white rum or vodka per glass before topping with sparkling water.
