Ingredients
  

For the Blueberry Syrup
  • 1 cup fresh or frozen blueberries
  • 0.5 cup water
  • 0.25 cup granulated sugar Adjust to taste
For Assembling the Drink
  • 0.5 cup fresh lemon juice About 3 large lemons
  • 4 cups cold sparkling water or club soda
  • 1 cup ice cubes
  • 4 tbsp fresh blueberries For garnish
  • 4 slices lemon wheels For garnish

Instructions
  1. Prepare the Blueberry Syrup: Combine blueberries, 0.5 cup water, and sugar in a small saucepan.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves and the blueberries have softened (about 5-7 minutes). Lightly mash the berries with a spoon.
  3. Strain the syrup through a fine-mesh sieve into a small bowl, pressing down on the solids to extract all the liquid. Discard the solids. Let the syrup cool completely.
  4. Assemble the Drinks: In four tall glasses, divide the cooled blueberry syrup evenly (about 2 tablespoons per glass, or adjust to desired sweetness).
  5. Add ice cubes to each glass. Pour 1/4 cup of fresh lemon juice into each glass.
  6. Top each serving with cold sparkling water or club soda. Stir gently to combine the layers.
  7. Garnish each drink with fresh blueberries and a slice of lemon before serving immediately.

Notes

This recipe makes a concentrate syrup that can be stored in the refrigerator for up to one week. For an adult version, add 1 oz of white rum or vodka per glass before topping with sparkling water.
