Ingredients
  

  • 1 pound breakfast sausage pork or turkey, cooked and crumbled
  • 1 pound tater tots thawed slightly
  • 1 small onion finely chopped
  • 1/2 green bell pepper finely chopped
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup shredded cheddar cheese or your favorite cheese blend
  • salt to taste
  • freshly ground black pepper to taste
  • Optional toppings extra cheese, chopped chives, hot sauce

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray or butter.
  2. If you haven't already, cook your breakfast sausage according to package directions until browned and cooked through. Drain off any excess grease and set aside.

  3. In a large skillet, heat a tablespoon of oil or butter over medium heat. Add the chopped onion and green bell pepper and sauté until softened, about 5-7 minutes.

  4. In a medium bowl, whisk together the eggs and milk. Season generously with salt and pepper.

  5. In the prepared baking dish, spread about half of the slightly thawed tater tots in an even layer. This will form the bottom crust.

  6. Next, layer the cooked and crumbled breakfast sausage over the tater tots.

  7. Evenly distribute the sautéed onions and bell peppers over the sausage.

  8. Pour the egg and milk mixture evenly over the sausage, vegetables, and tater tots.

  9. Sprinkle the shredded cheddar cheese over the top of the casserole.

  10. Arrange the remaining tater tots in a single layer over the cheese. Press them down gently to ensure they are nestled into the filling.

  11. Bake for 30-40 minutes, or until the tater tots are golden brown and crispy, and the egg mixture is set and puffed. You can test for doneness by inserting a knife into the center; it should come out clean.
  12. If desired, for extra browning on the tater tots, you can switch the oven to the broiler setting for the last 2-3 minutes of baking, watching carefully to prevent burning.

Notes

To store leftover casserole, allow it to cool completely before transferring it to an airtight container. It will stay fresh in the refrigerator for up to 3-4 days.
To reheat: Oven at 350°F (175°C) for 15-20 minutes for crispiest results. Microwave for a quick reheat, but tots may lose crispiness. Freeze for up to 2-3 months, reheating from frozen at 350°F (175°C) for 45-60 minutes.
