Method
 

  1. Prepare the Lobster Tails: If your lobster tails are frozen, ensure they are fully thawed. Using kitchen shears, carefully cut through the top of the hard shell, from the end of the tail all the way to where the tail meets the fin, but do not cut through the meat. Gently open the shell and pull the meat upwards through the opening, resting it on top of the shell. You can also butterfly the tail by cutting the meat down the middle lengthwise, without cutting all the way through, and spreading it open like a book. Pat the lobster meat dry with paper towels.

  2. Preheat the Broiler: Position an oven rack about 6-8 inches from the heat source and preheat your broiler to high. Line a baking sheet with foil for easier cleanup.
  3. Prepare the Lemon Butter Sauce: In a small bowl, combine the melted unsalted butter, fresh lemon juice, minced garlic (if using), chopped fresh parsley, and paprika (if using). Season with salt and freshly ground black pepper to taste. Stir well to combine.

  4. Baste the Lobster Tails: Arrange the prepared lobster tails on the foil-lined baking sheet. Brush a generous amount of the lemon butter sauce over the exposed lobster meat. Reserve some of the sauce for serving.

The lobster meat should turn opaque and white, with a slightly golden-brown crust, and feel firm to the touch. Be careful not to overcook, as this can make the lobster tough. Use an instant-read thermometer to ensure the internal temperature reaches 140-145°F (60-63°C).
  6. Rest and Serve: Once cooked, remove the lobster tails from the broiler. Let them rest for a minute or two. Drizzle with the remaining lemon butter sauce, garnish with extra fresh parsley, and serve immediately with lemon wedges.

Notes
