Ingredients
  

For the Pineapple
  • 1 large fresh pineapple Ripe, peeled, cored, and sliced into 1/2-inch thick rings
For the Glaze
  • 1/4 cup packed light brown sugar
  • 2 tablespoons unsalted butter Melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Method
 

Instructions
  1. Prepare the grill for medium-high heat (approximately 375°F to 450°F).
  2. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, and salt until well combined to create the glaze.
  3. Lightly brush the pineapple rings on both sides with a small amount of the brown sugar glaze. Reserve the remaining glaze for brushing during grilling.
  4. Place the pineapple rings directly on the clean, oiled grill grates. Grill for 3 to 5 minutes per side, until distinct grill marks appear and the pineapple begins to soften slightly.
  5. During the last minute of cooking on the second side, brush generously with the remaining brown sugar glaze. This allows the sugars to caramelize without burning.
  6. Remove the grilled pineapple from the heat immediately and serve warm. Excellent served with vanilla ice cream or Greek yogurt.

Notes

Ensure the grill grates are thoroughly cleaned and oiled before cooking to prevent the sugary glaze from sticking. Overcooking will result in mushy pineapple; aim for tender-crisp.
