- Preheat your oven according to the brownie mix instructions, usually around 350°F (175°C). Grease and flour a 9x13 inch baking pan, or line it with parchment paper for easier removal. In a large bowl, combine the brownie mix with the wet ingredients (eggs, oil, water) as directed on the box. If your brownie mix does not include flour and baking powder, whisk in the 1/2 cup of all-purpose flour and 1/4 teaspoon of baking powder with the dry mix before adding the wet ingredients. - Pour the brownie batter evenly into the prepared baking pan. Bake for the time recommended on the brownie mix box, or until a toothpick inserted into the center comes out with moist crumbs attached (not wet batter). Avoid overbaking, as slightly underbaked brownies make for a chewier sandwich base.
- Once baked, remove the brownies from the oven and let them cool completely in the pan on a wire rack. This is a crucial step, as warm brownies will melt the ice cream too quickly. For best results, it's ideal to let them cool for at least 1-2 hours, or even chill them in the refrigerator for about 30 minutes once cooled to room temperature.
- While the brownies are cooling, take your pint of vanilla ice cream out of the freezer and let it soften at room temperature for about 10-15 minutes. You want it pliable enough to spread but not so soft that it becomes soupy.1 pint high-quality vanilla ice cream
- Once the brownies are fully cooled and firm, carefully invert the pan onto a clean cutting board (or lift out by the parchment paper if you used it). Cut the brownie slab in half horizontally, if desired, to create two thinner layers for easier sandwich making, or keep it as one thick layer. Cut the cooled brownies into desired sandwich shapes, usually squares or rectangles, approximately 3x3 inches.
- Place one brownie piece (cut-side up) on a clean surface. Scoop a generous portion of the softened vanilla ice cream onto the brownie. Gently spread the ice cream to be about 1/2 inch thick, reaching close to the edges.1 pint high-quality vanilla ice cream
- Place another brownie piece (cut-side down) on top of the ice cream. Gently press down to create a sandwich, allowing the ice cream to slightly ooze out the sides.

- Place the assembled brownie ice cream sandwiches on a parchment-lined baking sheet or tray. Freeze them for at least 2-3 hours, or until the ice cream is firm and the sandwiches hold their shape. This step is essential for perfect brownie ice cream sandwiches that won't fall apart.
