Ingredients

  • 2-3 cups cooked chicken shredded (rotisserie chicken works perfectly for convenience, or boil/bake chicken breasts until cooked through and shred)
  • 1 package cream cheese (8-ounce), softened and cut into cubes
  • 1/2 cup buffalo wing sauce or more to taste (Frank's RedHot Buffalo Wings Sauce is a classic choice)
  • 1/2 cup ranch dressing or blue cheese dressing for a tangier flavor
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup crumbled blue cheese optional, for an extra pungent kick
  • Green onions chopped, for garnish (optional)
  • cooking spray

Equipment

  • Slow Cooker

Method

  1. Prepare the Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray to prevent sticking and make cleanup easier.

  2. Combine Ingredients: Add the shredded cooked chicken, cubed softened cream cheese, buffalo wing sauce, and ranch dressing to the slow cooker.
2-3 cups cooked chicken, 1 package cream cheese, 1/2 cup buffalo wing sauce, 1/2 cup ranch dressing
  3. Stir Together: Stir the mixture well to combine all ingredients thoroughly. Ensure the cream cheese is distributed evenly. Don't worry if it's not perfectly smooth yet; it will melt as it cooks.
  4. Add Cheeses: Sprinkle in the shredded cheddar cheese and Monterey Jack cheese. If using, add the crumbled blue cheese now too. Give it another gentle stir to somewhat incorporate the cheese, leaving some on top for a nice melted crust.
1/2 cup shredded cheddar cheese, 1/2 cup shredded Monterey Jack cheese, 1/4 cup crumbled blue cheese
  5. Cook on Low: Cover the slow cooker and cook on the LOW setting for 1.5 to 2 hours.
  6. Stir and Serve: After 1.5 hours, give the dip a good stir. All the cheeses should be melted and creamy, and the dip should be hot and bubbly throughout. If it needs more time, continue cooking for another 30 minutes.
  7. Garnish (Optional): Once heated through, transfer the dip to a serving bowl or serve directly from the slow cooker (on a "warm" setting if your slow cooker has one). Garnish with chopped green onions, if desired, for a fresh pop of color and flavor. Serve warm with your favorite dippers!
