Ingredients
  

For the Skewers
  • 1 pint Cherry Tomatoes Halved if very large
  • 8 oz Fresh Mozzarella Pearls (Bocconcini) Drained
  • 1 bunch Fresh Basil Leaves Medium to large leaves
  • 20 Wooden Skewers Approximately 6-inch length
For the Balsamic Drizzle
  • 1/2 cup Balsamic Vinegar Good quality
  • 1 tablespoon Honey or Maple Syrup Optional, for extra sweetness
  • 1 tablespoon Extra Virgin Olive Oil For finishing
  • 1/4 teaspoon Salt To taste

Method
 

Instructions
  1. Prepare the balsamic reduction: Pour the balsamic vinegar and honey (if using) into a small saucepan over medium heat.
  2. Bring the vinegar to a gentle simmer. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until it has thickened enough to coat the back of a spoon lightly. It should reduce by about one-third. Remove from heat and set aside to cool.
  3. While the drizzle cools, assemble the skewers. Thread a tomato half (or whole cherry tomato), a folded basil leaf, and a mozzarella pearl onto each wooden skewer, alternating the ingredients until the skewer is filled.
  4. Arrange the assembled skewers neatly on a serving platter.
  5. Just before serving, lightly drizzle the cooled balsamic reduction over the skewers.
  6. Drizzle lightly with extra virgin olive oil and sprinkle with salt to taste. Serve immediately.

Notes

If you want a smoother glaze without cooking, you can use a store-bought balsamic glaze. Ensure the mozzarella balls are well-drained so they don't water down the flavor.
