- Prepare the balsamic reduction: Pour the balsamic vinegar and honey (if using) into a small saucepan over medium heat.
- Bring the vinegar to a gentle simmer. Reduce the heat to low and let it simmer for about 5-7 minutes, stirring occasionally, until it has thickened enough to coat the back of a spoon lightly. It should reduce by about one-third. Remove from heat and set aside to cool.
- While the drizzle cools, assemble the skewers. Thread a tomato half (or whole cherry tomato), a folded basil leaf, and a mozzarella pearl onto each wooden skewer, alternating the ingredients until the skewer is filled.
- Arrange the assembled skewers neatly on a serving platter.
- Just before serving, lightly drizzle the cooled balsamic reduction over the skewers.
- Drizzle lightly with extra virgin olive oil and sprinkle with salt to taste. Serve immediately.
Notes
If you want a smoother glaze without cooking, you can use a store-bought balsamic glaze. Ensure the mozzarella balls are well-drained so they don't water down the flavor.
