- Preheat your oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
- In a large bowl, whisk together the unsweetened applesauce, natural peanut butter, melted coconut oil, and eggs until well combined and smooth.½ cup Unsweetened Applesauce, ¼ cup Natural Peanut Butter (xylitol-free), 2 tablespoons Coconut Oil (melted), 2 Large Eggs
- Gradually add the whole wheat flour and cinnamon to the wet ingredients, mixing until a thick dough forms.2 cups Whole Wheat Flour, 1 teaspoon Cinnamon
- Fold in the shredded carrots until evenly distributed throughout the dough.1 cup Shredded Carrots
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about an inch between each treat. You can gently flatten them with the back of a spoon if desired.
- Bake for 15-20 minutes, or until the edges are golden brown and the treats are firm to the touch.
- Remove from the oven and let the treats cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store in an airtight container in the refrigerator for up to 5-7 days. Freeze for up to 2-3 months.
