- In a large skillet over medium-high heat, cook the ground beef until it's browned and no pink remains. Drain off any excess grease.1 pound lean ground beef
- Stir in the finely chopped yellow onion, dill pickles, salt, black pepper, garlic powder, and paprika. Cook for an additional 3-5 minutes, stirring occasionally, until the onion is softened and the seasonings are well combined.1/2 cup finely chopped yellow onion, 1/4 cup finely chopped dill pickles, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon paprika
- Gently warm the flour tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds per side, or by wrapping them in a damp paper towel and microwaving for 30-45 seconds until pliable. This step is crucial for preventing them from tearing when rolled.8 large flour tortillas
- Lay a warmed tortilla flat. Spread a thin layer of ketchup and mustard evenly over the tortilla, leaving a small border around the edges.8 large flour tortillas, 1/2 cup ketchup, 1/4 cup yellow mustard
- Spoon about 1/4 to 1/3 cup of the beef mixture evenly over the ketchup and mustard layer.1 pound lean ground beef, 1/2 cup ketchup, 1/4 cup yellow mustard
- Sprinkle a generous amount of shredded cheddar cheese over the beef mixture.1 cup shredded cheddar cheese
- Start from one edge of the tortilla and tightly roll it up, tucking in the sides as you go to create a compact roll.8 large flour tortillas
- If you prefer, you can use toothpicks to secure the rollups if they seem loose, or simply slice them in half diagonally once rolled.
- Arrange the cheese burger rollups on a platter. If serving immediately, you can add any desired optional toppings like chopped lettuce, diced tomatoes, or extra pickles. For a more traditional burger presentation, sprinkle sesame seeds over the top.chopped lettuce, diced tomatoes, sesame seeds, extra pickles
Notes
To store leftover rollups, allow them to cool completely before wrapping tightly in plastic wrap or placing them in an airtight container. Store in the refrigerator for up to 3 days. Reheat in a 350°F (175°C) oven for 8-10 minutes or microwave for 30-60 seconds. For freezing, wrap cooled rollups securely and store in a freezer-safe bag for up to 1 month. Reheat from frozen in the oven for approximately 15-20 minutes.
