- Preheat your oven to 350°F (175°C).
- Roll out the pizza dough on a lightly floured surface into a rectangle.
- Cut the dough into 6-8 equal portions.
- Place a generous amount of shredded mozzarella and gouda cheese in the center of each piece of dough.
- Pinch the dough together around the cheese to seal it tightly, forming a ball or oblong shape.
- In a small bowl, dissolve the baking soda in the water to create the baking soda bath.
- Dip each pretzel into the baking soda bath for a few seconds, then place it onto a baking sheet lined with parchment paper.
- Brush each pretzel with melted butter and sprinkle with coarse sea salt.
- Bake the pretzels in the preheated oven for 12-15 minutes, or until they are golden brown.
- Allow to cool slightly before serving.
