- Cook the refrigerated cheese tortellini according to package directions until al dente. Drain well.
- In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried Italian seasoning, salt, and black pepper. This will be your dressing.
- Add the drained tortellini to the bowl with the dressing. Gently toss to coat the tortellini evenly.
- Transfer the dressed tortellini to a serving platter.
- Sprinkle generously with grated Parmesan cheese and chopped fresh parsley, if desired.
- Serve immediately while still slightly warm, or chill for a cold appetizer.
Notes
For a spicier kick, add a pinch of red pepper flakes to the dressing. You can also add other ingredients like cherry tomatoes, mozzarella balls, or olives to make it a more substantial pasta salad.
