Ingredients
  

  • 2 cups cooked chicken, shredded or diced (rotisserie chicken is a fantastic shortcut!)
  • 1 ripe avocado mashed or thinly sliced
  • 4 large (burrito-sized) tortillas whole wheat or your favorite variety
  • 1/4 cup finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 2 tablespoons mayonnaise or Greek yogurt (use Greek yogurt for a lighter option)
  • 1/2 teaspoon salt , or to taste
  • 1/4 teaspoon black pepper , or to taste
Optional Add-ins
  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup corn kernels
  • 1/4 cup black beans , rinsed and drained
  • 1 handful baby spinach or shredded lettuce

Method
 

  1. In a medium bowl, combine the shredded or diced cooked chicken. Add the finely diced red onion and chopped fresh cilantro.

  2. Spoon in the mayonnaise or Greek yogurt. Add the fresh lime juice for a bright, zesty kick.

  3. Season the mixture generously with salt and black pepper. Taste and adjust seasonings as needed. Stir everything together until the chicken is well coated and all the ingredients are evenly distributed. If using optional add-ins like bell peppers, corn, or black beans, gently fold them into the chicken mixture at this stage.

  4. If you prefer mashed avocado, mash it in a small bowl with a fork, adding a pinch of salt and a squeeze of lime juice to prevent browning and enhance flavor. If you prefer sliced avocado, simply slice one ripe avocado.

  5. Lightly warm your tortillas. You can do this by briefly heating them in a dry skillet over medium heat for about 20-30 seconds per side, or by wrapping stacks of tortillas in a damp paper towel and microwaving them for 30-60 seconds until pliable. This makes them easier to roll without cracking.

  6. Lay one warmed tortilla flat on a clean surface. If using baby spinach or shredded lettuce, place a layer of greens down the center of the tortilla.

  7. Spoon approximately one-quarter of the prepared chicken mixture onto the greens. Then, layer on the mashed or sliced avocado over the chicken.

  8. Fold in the sides of the tortilla over the filling, then tightly roll up the tortilla from the bottom, tucking as you go, to create a compact wrap.

  9. Repeat the assembly process with the remaining tortillas and filling. For easier handling or serving, you can cut each wrap in half diagonally. Serve immediately and enjoy your delicious Chicken Avocado Wrap!
