- Begin by preheating your oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper if you prefer an open-faced meatloaf.
- In a large mixing bowl, crack the egg and lightly beat it with a fork. Add the milk to the beaten egg and whisk gently until combined.1 large egg, 2 tablespoons milk

- Add the grated Parmesan cheese and breadcrumbs into the same bowl. Mix them into the wet ingredients until just combined; be careful not to overmix, as this can lead to a tough meatloaf.1/2 cup breadcrumbs, 1/4 cup grated Parmesan cheese
- Gently add the ground chicken to the bowl. Using your hands (the best tool for this!), carefully mix the ground chicken into the breadcrumb mixture until everything is just incorporated. Again, avoid overmixing.1 pound ground chicken
- Transfer the chicken mixture to your prepared loaf pan, pressing it gently to form an even loaf. If you're using a baking sheet, shape the mixture into a free-form loaf directly on the parchment paper. This shaping helps ensure even cooking.
- Place the meatloaf in the preheated oven. Bake for approximately 30-35 minutes for a loaf pan, or 35-40 minutes for a free-form loaf, or until the internal temperature reaches 165°F (74°C) and the meatloaf is cooked through. You can use a meat thermometer inserted into the thickest part to check for doneness.
- Once cooked, carefully remove the meatloaf from the oven. Let it rest for about 5-10 minutes before slicing. This resting period allows the juices to redistribute, resulting in a more tender and moist meatloaf. Slice and serve hot, perhaps with your favorite side dishes.
Notes
This meatloaf is also great for meal prep. Leftovers can be stored in an airtight container for 3-4 days and reheated in the oven or microwave.
