Ingredients
  

  • 2 cups cooked and shredded chicken
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • ½ cup diced bell peppers
  • ½ cup diced red onion
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • ¼ cup fresh cilantro optional
  • Salsa sour cream, or guacamole (for serving)

Method
 

  1. Prepare the filling: In a bowl, mix shredded chicken with garlic powder, cumin, chili powder, and a drizzle of olive oil.
  2. Sauté veggies: Heat a pan over medium heat and sauté the diced onions and bell peppers until soft.
  3. Assemble the quesadilla: Lay a tortilla flat, sprinkle a layer of cheese, add seasoned chicken, sautéed veggies, and top with more cheese.
  4. Cook to perfection: Heat a skillet over medium heat, place the filled tortilla in the pan, and cook until golden and crispy, about 2-3 minutes per side.
  5. Slice and serve: Cut into wedges and serve with salsa, sour cream, or guacamole.

Notes

Use rotisserie chicken for an even quicker meal.
Swap flour tortillas for corn tortillas to make it gluten-free.
Add jalapeños for a spicy kick.
