- Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
- Drain the feta cheese well. Cut the feta block into roughly 1-inch cubes. Pat them dry with paper towels.
- Set up a dredging station: In a shallow bowl, combine the flour, oregano, garlic powder, and black pepper. In a second shallow bowl, place the beaten egg. In a third shallow bowl, add the panko breadcrumbs.
- Coat each feta cube by first tossing it in the seasoned flour, then dipping it in the egg, and finally coating it throughly with the panko breadcrumbs. Place the coated feta cubes on the prepared baking sheet.
- In a small saucepan, gently heat the honey, chili flakes, and salt over low heat, stirring until combined. Do not boil. Remove from heat and set aside.
- Heat the olive oil in a non-stick skillet over medium-high heat. Carefully add the coated feta cubes to the hot oil (you may need to do this in batches to avoid overcrowding). Fry for about 2-3 minutes per side, until golden brown and crispy. Transfer fried feta to a plate lined with paper towels to drain excess oil.
- Arrange the fried feta rolls on a serving platter. Generously drizzle the chili honey over the warm feta. Garnish with fresh chives, if desired.
Notes
Serve immediately while warm for the best texture and flavor. If you prefer a milder heat, reduce the amount of chili flakes in the honey. You can also bake the feta rolls directly on the parchment paper without frying for a healthier option, though they won't be as crispy.
