Method
- In a medium-sized bowl or a large jar, combine the rolled oats, chia seeds, unsweetened cocoa powder, and a pinch of salt. Whisk these dry ingredients together thoroughly to ensure the cocoa powder is evenly distributed and there are no clumps.1/2 cup rolled oats (not instant oats), 2 tablespoons chia seeds, 1 tablespoon unsweetened cocoa powder, Pinch salt
- Pour in the unsweetened almond milk (or your preferred milk), maple syrup (or honey), and vanilla extract. Stir everything together until all the ingredients are well incorporated and the mixture is smooth.1 cup unsweetened almond milk, 1 tablespoon maple syrup or honey, 1/4 teaspoon vanilla extract
- Gently fold in the plain Greek yogurt. Stir it in until it's fully blended into the oat mixture, aiming for a uniformly creamy consistency. Avoid overmixing at this stage.1/2 cup plain Greek yogurt
- If you’re making individual servings, divide the mixture into jars or containers. Otherwise, leave it in the bowl. Cover the container(s) tightly with a lid or plastic wrap.
- Place the covered container(s) in the refrigerator and let them chill for at least 6 hours, or preferably overnight. This allows the chia seeds to swell and thicken the mixture, and the oats to soften beautifully.
- In the morning, stir the overnight oats well. If the mixture is too thick for your liking, you can add a splash more milk to reach your desired consistency. Serve chilled, topped with your favorite additions like fresh berries, nuts, or a drizzle of more maple syrup.
Notes
Storing: This Chocolate Chia Overnight Oats Greek Yogurt is best stored in an airtight container or individual jars in the refrigerator. It will stay fresh and delicious for up to 3-4 days when stored properly. The texture might thicken slightly over time due to the chia seeds, which is normal.
Reheating: Overnight oats are typically enjoyed cold straight from the refrigerator. No reheating is necessary for optimal taste and texture. If you find the oats have become too thick after storing, simply stir in a tablespoon or two of milk (dairy or non-dairy) until you reach your desired consistency.
