Method
 

  1. Gently wash your strawberries under cool running water. It's crucial to dry them completely after washing. Use paper towels to pat each strawberry dry, paying special attention to the crevices around the stem. Excess moisture will prevent the chocolate from adhering properly and can cause it to seize. Leave the green tops (hulls) on for easy dipping and a beautiful presentation.

  2. Place your chosen chocolate chips or chopped chocolate in a heatproof bowl. You can melt the chocolate using one of two methods:
    Double Boiler Method: Fill a saucepan with about an inch of water and bring it to a gentle simmer over low heat. Place the bowl of chocolate on top of the saucepan, ensuring the bottom of the bowl doesn't touch the water. Stir the chocolate continuously until it's smooth and completely melted.
    Microwave Method: Place the bowl of chocolate in the microwave. Microwave on 50% power in 30-second intervals, stirring well between each interval. Continue until the chocolate is smooth and melted. Be patient and avoid overheating, as this can cause the chocolate to burn or seize.

  3. If you're using coconut oil or shortening, stir it into the melted chocolate until fully incorporated. This helps create a thinner, glossier coating that's easier to work with and results in a beautiful sheen.

  4. Hold a strawberry by its hull and dip it into the melted chocolate, rotating it to coat about two-thirds to three-quarters of the berry. Allow any excess chocolate to drip back into the bowl for a few seconds.

  5. Gently place the chocolate-dipped strawberry onto a baking sheet lined with parchment paper or wax paper. Ensure the strawberries are not touching each other, as they might stick together as the chocolate hardens.

  6. While the chocolate is still wet, you can immediately sprinkle on your desired toppings. For a drizzle effect with white chocolate, melt white chocolate chips separately and use a fork or a piping bag with a small tip to create thin lines over the semi-sweet or dark chocolate.

  7. Once all the strawberries have been dipped and decorated, place the baking sheet in the refrigerator for at least 15-30 minutes, or until the chocolate is completely firm and hardened.

For optimal freshness, store your finished chocolate covered strawberries in a single layer in an airtight container in the refrigerator. They are best enjoyed within 2-3 days of making. Avoid stacking them. If you need to freeze them, place the dipped strawberries on a parchment-lined baking sheet and freeze until solid before transferring them to a freezer-safe bag or container. They can be kept in the freezer for up to 1-2 months. To enjoy frozen strawberries, simply place them in the refrigerator overnight to thaw; the chocolate may develop a slight bloom (a dulling of the color), but they will still be delicious. Reheating is generally not recommended, as it can cause the chocolate to melt and the strawberries to become mushy.
