Ingredients

  • 2.5 cups creamy peanut butter (standard Peter Pan or Jif recommended for best texture)
  • 4 cups confectioners' sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 (12-ounce) bag semi-sweet chocolate chips
  • 2 tablespoons vegetable shortening or coconut oil (for smoother melting)

Method
 

  1. In a large mixing bowl, cream together the softened butter and creamy peanut butter until well combined and smooth. You can use an electric mixer on medium speed or a sturdy spatula and some elbow grease.

  2. Gradually add the sifted confectioners' sugar, about a cup at a time, mixing thoroughly after each addition. This will help prevent pockets of sugar and ensure a smooth consistency. Once all the sugar is incorporated, stir in the vanilla extract until evenly distributed. The mixture should be thick and moldable.

  3. Roll the peanut butter mixture into small, football-shaped balls, approximately 1 inch in size. You can also make them slightly more spherical if you prefer. For easier handling, you can chill the dough for about 15-20 minutes before shaping if it’s too soft. Place the shaped buckeyes on a baking sheet lined with parchment paper or wax paper.
  4. In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable shortening (or coconut oil). Microwave on 50% power for 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate in a double boiler over simmering water.

  5. Using a toothpick or a fork, dip each peanut butter ball into the melted chocolate, coating about two-thirds of the ball. Leave a small circle of the peanut butter mixture exposed at the top to resemble the "buckeye" shape.
  6. Place the chocolate-dipped buckeyes back onto the parchment-lined baking sheet. Allow them to sit at room temperature until the chocolate has set, or speed up the process by refrigerating them for about 10-15 minutes.

Notes

Store leftover buckeyes in an airtight container at room temperature for up to 3-4 days, or refrigerate for up to 2 weeks. For longer storage, freeze for up to 3 months.
