- In a large mixing bowl, cream together the softened butter and creamy peanut butter until well combined and smooth. You can use an electric mixer on medium speed or a sturdy spatula and some elbow grease.1 cup unsalted butter, softened, 2.5 cups creamy peanut butter
- Gradually add the sifted confectioners' sugar, about a cup at a time, mixing thoroughly after each addition. This will help prevent pockets of sugar and ensure a smooth consistency. - Roll the peanut butter mixture into small, football-shaped balls, approximately 1 inch in size. You can also make them slightly more spherical if you prefer. For easier handling, you can chill the dough for about 15-20 minutes before shaping if it’s too soft. Place the shaped buckeyes on a baking sheet lined with parchment paper or wax paper.
- In a microwave-safe bowl, combine the semi-sweet chocolate chips and vegetable shortening (or coconut oil). Microwave on 50% power for 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Alternatively, you can melt the chocolate in a double boiler over simmering water.1 (12-ounce) bag semi-sweet chocolate chips, 2 tablespoons vegetable shortening or coconut oil
- Using a toothpick or a fork, dip each peanut butter ball into the melted chocolate, coating about two-thirds of the ball. Leave a small circle of the peanut butter mixture exposed at the top to resemble the "buckeye" shape.
- Place the chocolate-dipped buckeyes back onto the parchment-lined baking sheet. Allow them to sit at room temperature until the chocolate has set, or speed up the process by refrigerating them for about 10-15 minutes.
Notes
Store leftover buckeyes in an airtight container at room temperature for up to 3-4 days, or refrigerate for up to 2 weeks. For longer storage, freeze for up to 3 months.
