Method
 

  1. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. This usually takes about 3-5 minutes with an electric mixer.

  2. Beat in the two large eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix; you want a cohesive dough.

Notes

Store them in an airtight container at room temperature for up to 3-4 days. Adding a slice of bread to the container can help maintain their softness. They freeze beautifully! Wrap them individually in plastic wrap, then place them in a freezer-safe bag or container. They can be stored in the freezer for up to 2-3 months. To enjoy frozen cookies, simply let them thaw at room temperature.
