  • 12 ounces semi-sweet or dark chocolate chips for melting
  • 1 tablespoon coconut oil or vegetable oil optional, for smoother melting

Method
 

  1. Combine the creamy peanut butter and softened unsalted butter in a medium mixing bowl. Beat them together with an electric mixer on medium speed until smooth and well combined.

  2. Gradually add the sifted powdered sugar to the peanut butter mixture, mixing on low speed until just incorporated. This will create a thick dough. Stir in the vanilla extract and salt until evenly distributed.

  3. Lightly grease parchment paper or wax paper laid out on a baking sheet or plate. Using your hands, roll the peanut butter mixture into small balls, about 1 inch in diameter. You can also press the mixture into a small heart-shaped mold if you have one, or simply shape them by hand into small, flattened heart shapes. Aim for a consistent thickness so they all melt evenly.
  4. Place the prepared peanut butter hearts in the refrigerator and chill for at least 30-60 minutes, or until firm. This step is crucial to prevent them from melting too much when you dip them in chocolate.
  5. While the peanut butter hearts are chilling, place the chocolate chips in a microwave-safe bowl. Add the coconut oil or vegetable oil, if using. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. Be careful not to overheat the chocolate, as it can seize. Alternatively, you can melt the chocolate using a double boiler.

  6. Once the peanut butter hearts are firm and the chocolate is melted and smooth, it’s time to dip! Take one chilled peanut butter heart at a time and carefully dip it into the melted chocolate, ensuring it’s fully coated. You can use a fork to lift the heart out, allowing any excess chocolate to drip back into the bowl.
  7. Place the chocolate-covered hearts back onto the prepared parchment or wax paper. You can use a toothpick to gently swirl a decorative pattern on top of the chocolate before it sets, if desired.
  8. Return the baking sheet with the dipped hearts to the refrigerator for another 30 minutes, or until the chocolate is completely set and hardened.
  9. Once the chocolate is set, your Chocolate Peanut Butter Valentine's Hearts are ready to be enjoyed or packaged as a sweet gift.

Notes
