- In a medium bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Whisk everything together until the mixture is smooth and well combined. If you're using the freeze-dried strawberry powder for an intensified flavor, stir it in now.1 cup plain Greek yogurt, 2 tablespoons honey or maple syrup, 1 teaspoon vanilla extract, 1 tablespoon freeze-dried strawberry powder
- Gently fold the finely chopped fresh strawberries into the yogurt mixture. Be careful not to overmix, as you want to maintain some texture from the strawberries.1/2 cup fresh strawberries
- Place the dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each interval, until the chocolate is mostly melted and smooth. Alternatively, you can melt the chocolate in a double boiler over low heat.1/4 cup dark chocolate chips
- Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. This will prevent the clusters from sticking. Using a tablespoon or a small cookie scoop, drop dollops of the strawberry-yogurt mixture onto the prepared baking sheet. Aim for bite-sized portions, leaving a little space between each cluster.
- Once all the yogurt mixture has been scooped, carefully drizzle the melted dark chocolate over the top of each yogurt cluster. You can use a spoon or a piping bag for a more controlled drizzle. If you desire, sprinkle a tiny pinch of sea salt over the chocolate drizzle for an extra flavor dimension.1 pinch sea salt
- Carefully place the baking sheet into the freezer. Allow the chocolate strawberry yogurt clusters to freeze for at least 1-2 hours, or until they are completely firm and solid.
- Once frozen, gently peel the Chocolate Strawberry Yogurt Clusters from the parchment paper. Serve immediately as a refreshing treat.
Notes
Store the frozen clusters in an airtight container in the freezer. Layering them between sheets of parchment paper can prevent them from sticking together. They will stay fresh in the freezer for up to 1 month. These clusters are not meant for reheating as they will melt. Enjoy them straight from the freezer for the best experience. If they become too hard to eat immediately, let them sit at room temperature for just a few minutes until they reach your desired consistency.
