Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 2 large large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 ½ cups gluten-free all-purpose flour blend (ensure it contains xanthan gum)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chocolate chips (dairy-free optional, for a fully allergen-friendly treat)
  • ½ cup chopped nuts (such as walnuts or pecans; optional)

Equipment

  • 8x8 inch baking pan
  • - Parchment Paper
  • Large Bowl
  • Medium Bowl
  • Wire rack
  • Spatula

Method

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal. This prevents sticking and makes cleanup a breeze.
  2. In a large bowl, whisk together the melted butter and granulated sugar until well combined and smooth. This forms the foundation of our blondies' rich flavor.
1 cup (2 sticks) unsalted butter, melted, 2 cups granulated sugar
  3. Add the room temperature eggs, one at a time, whisking well after each addition until fully incorporated. Stir in the vanilla extract. The room temperature eggs help to create a smoother, more emulsified batter.
2 large large eggs, at room temperature, 2 teaspoons vanilla extract
  4. In a separate medium bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt. This ensures that the leavening agent and salt are evenly distributed throughout the flour.
1 ½ cups gluten-free all-purpose flour blend (ensure it contains xanthan gum), 1 teaspoon baking powder, ½ teaspoon salt
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough blondies. A few streaks of flour are perfectly fine.
  6. Gently fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter. This adds delightful pockets of melted chocolate and a satisfying crunch.
1 cup chocolate chips (dairy-free optional, for a fully allergen-friendly treat), ½ cup chopped nuts (such as walnuts or pecans; optional)
  7. Pour the batter into the prepared baking pan and spread it evenly using a spatula. Ensure the batter reaches all corners of the pan for even baking.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached (not wet batter). Be careful not to overbake, as this will result in dry blondies.
  9. Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. This allows them to set properly, making them easier to cut.
  10. Once completely cooled, cut the blondies into squares. Serve and enjoy your delicious Classic Gluten-Free Blondies!
