- Preheat your oven to 350°F (175°C). Lightly grease an 8x8 inch baking pan and line it with parchment paper, leaving some overhang on the sides for easy removal. This prevents sticking and makes cleanup a breeze.
- In a large bowl, whisk together the melted butter and granulated sugar until well combined and smooth. This forms the foundation of our blondies' rich flavor.1 cup (2 sticks) unsalted butter, melted, 2 cups granulated sugar
- Add the room temperature eggs, one at a time, whisking well after each addition until fully incorporated. Stir in the vanilla extract. The room temperature eggs help to create a smoother, more emulsified batter.2 large large eggs, at room temperature, 2 teaspoons vanilla extract
- In a separate medium bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt. This ensures that the leavening agent and salt are evenly distributed throughout the flour.1 ½ cups gluten-free all-purpose flour blend (ensure it contains xanthan gum), 1 teaspoon baking powder, ½ teaspoon salt
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough blondies. A few streaks of flour are perfectly fine.
- Gently fold in the chocolate chips and chopped nuts (if using) until evenly distributed throughout the batter. This adds delightful pockets of melted chocolate and a satisfying crunch.1 cup chocolate chips (dairy-free optional, for a fully allergen-friendly treat), ½ cup chopped nuts (such as walnuts or pecans; optional)
- Pour the batter into the prepared baking pan and spread it evenly using a spatula. Ensure the batter reaches all corners of the pan for even baking.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs attached (not wet batter). Be careful not to overbake, as this will result in dry blondies.
- Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. This allows them to set properly, making them easier to cut.
- Once completely cooled, cut the blondies into squares. Serve and enjoy your delicious Classic Gluten-Free Blondies!
