- In a small bowl, sprinkle the unflavored gelatin powder over the cold water. Let it sit for about 5-10 minutes, or until it has absorbed the water and looks spongy. - In a medium saucepan, combine the hot water and granulated sugar. Stir until the sugar is completely dissolved. Next, add the bloomed gelatin to the hot sugar-water mixture. Whisk continuously over low heat until the gelatin is completely dissolved, making sure no granules remain. - Gradually whisk in the evaporated milk (or condensed milk if you prefer a sweeter jelly). Continue whisking until the mixture is smooth and homogenous. The evaporated milk will give the coffee jelly a lovely creamy base and a beautiful light brown color.1 cup evaporated milk
- Pour the coffee jelly mixture into a serving dish, individual ramekins, or even a muffin tin if you plan to cut it into smaller cubes. Let it cool at room temperature for about 15-20 minutes. Once slightly cooled, cover the dish or ramekins with plastic wrap and refrigerate for at least 2-3 hours, or until the jelly is completely set and firm.
