- In a large mixing bowl, combine the mayonnaise and sour cream. Stir until smooth and well incorporated. This forms the creamy base of your salad.1 cup mayonnaise, 1/2 cup sour cream

- Drain the canned sweet corn and add it to the mixing bowl. The sweetness of the corn will balance the heat from the Rotel.1 15 ounce can sweet corn

- If you want to add a touch of acidity to enhance all the flavors, stir in the lime juice. This is particularly nice if you’re serving it as a lighter side.1 teaspoon lime juice

- For the best flavor, cover the bowl tightly with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together beautifully. You can also serve it immediately, but chilling enhances the taste.

Notes
Store any leftover Corn and Rotel Pasta Salad in an airtight container in the refrigerator. It will stay fresh and delicious for up to 3-4 days. This pasta salad is not ideal for freezing.
