  • 1.5 cups Almond flour
  • 2 tbsp Psyllium husk powder
  • 1 tsp Baking powder
  • 0.5 tsp Salt

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, whisk the eggs together and then stir in the cottage cheese until the mixture is well combined.
  3. Add the almond flour, psyllium husk powder, baking powder, and salt to the wet ingredients. Mix thoroughly until a thick, sticky dough forms.
  4. Let the dough rest for about 5 minutes to allow the psyllium husk to absorb the moisture, which makes the dough easier to handle.
  5. Divide the dough into 4 equal portions. With slightly wet hands, shape each portion into a smooth ball and place them on the prepared baking sheet.
  6. Gently press down on each ball to flatten it into a bun shape, then sprinkle the tops with sesame seeds if desired.
  7. Bake for 25 to 30 minutes, or until the buns are golden brown and feel firm to the touch.
  8. Remove from the oven and let the buns cool completely on a wire rack before slicing. This is crucial for the internal texture to set.

Notes

For the best texture, use a blender to smooth out the cottage cheese before mixing if you prefer a bun without visible cheese curds.
