  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 8 ounces dried pasta (such as penne, fettuccine, or rotini)
  • Fresh parsley, chopped, for garnish (optional)

Method
 

  1. Bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Before draining, reserve about 1 cup of the pasta cooking water. Drain the pasta and set aside.

  2. While the pasta cooks, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and break it apart with a spoon. Cook, stirring occasionally, until browned and no pink remains. Drain off any excess grease.

  3. Add the chopped onion and minced garlic to the skillet with the browned beef. Cook, stirring frequently, until the onion is softened and translucent, about 5-7 minutes.

  4. Stir in the dried Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper into the beef and onion mixture. Cook for another minute until fragrant.

  5. Pour in the crushed tomatoes and beef broth. Stir to combine, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it simmer for at least 10 minutes to allow the flavors to meld.

  6. Stir in the heavy cream and grated Parmesan cheese. Continue to cook, stirring, until the sauce is heated through and slightly thickened. Taste and adjust seasoning with additional salt and pepper if needed.

  7. Add the drained pasta to the skillet with the creamy beef sauce. Toss gently to coat all the pasta evenly. If the sauce seems a little too thick, add a splash of the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
