- In a medium-sized jar or container with a lid, add the rolled oats, chia seeds, and a pinch of salt. Stir them together to ensure they are evenly distributed. The chia seeds will help thicken the oats as they soak, creating a wonderfully creamy consistency.1/2 cup rolled oats, 1 tablespoon chia seeds, Pinch salt
- Next, add the cottage cheese to the jar. Don't worry if it looks a bit lumpy; it will blend in beautifully. Pour in the milk, honey or maple syrup (if using), and vanilla extract.1/4 cup cottage cheese, 1/2 cup milk, 1 teaspoon honey or maple syrup, 1/4 teaspoon vanilla extract
- Gently fold in the blueberries. If you're using frozen blueberries, they will thaw overnight and release some of their vibrant color and juice, enhancing the oat mixture. If using fresh, you can gently mash a few of them against the side of the jar to help distribute their flavor and color.1/4 cup blueberries
- Stir all the ingredients together until well combined. Make sure there are no dry patches of oats and that the cottage cheese is incorporated as smoothly as possible. The mixture will be quite liquidy at this stage, but don't be alarmed.
- Secure the lid on your jar or container. Place it in the refrigerator for at least 4 hours, but ideally overnight. This allows the oats and chia seeds to absorb the liquid, swell, and create that signature thick, creamy texture.
- In the morning, give your Creamy Blueberry Cottage Cheese Overnight Oats a good stir. If it seems too thick for your liking, you can add a splash more milk until it reaches your desired consistency. Top with extra blueberries, a drizzle of honey, a sprinkle of nuts, or a dollop of yogurt if desired.1/2 cup milk, 1/4 cup blueberries, 1 teaspoon honey or maple syrup
Notes
