Ingredients
  

  • 2 cups cooked chicken shredded
  • 8 ounces cream cheese softened
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped fresh green onions for garnish, optional
  • Tortilla chips, celery sticks, carrot sticks, or crackers for dipping

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch baking dish or a small (1.5-quart) casserole dish.
  2. In a large mixing bowl, add the softened cream cheese, buffalo wing sauce, and ranch (or blue cheese) dressing. Using an electric mixer on medium speed, or a sturdy spatula, beat/mix until the mixture is smooth and well combined. Ensure there are no lumps of cream cheese.

  3. Stir in the shredded cooked chicken, half of the shredded cheddar cheese (½ cup), and half of the shredded mozzarella cheese (½ cup) into the cream cheese mixture. Mix until all ingredients are evenly distributed.

  4. Spread the chicken mixture evenly into your prepared baking dish.
  5. Sprinkle the remaining ½ cup of shredded cheddar cheese and ½ cup of shredded mozzarella cheese evenly over the top of the dip.

  6. Bake for 20-25 minutes, or until the dip is hot and bubbly around the edges and the cheese on top is melted and lightly golden.
  7. Remove from the oven. If desired, garnish with chopped fresh green onions. Serve immediately with your favorite dippers.

Notes

For the creamiest texture, use full-fat cream cheese and ensure it's softened. Shredding your own cheese can also improve meltiness. Adjust buffalo sauce for desired heat.
