- The key to a truly creamy texture is to ensure your cottage cheese is thoroughly drained. Place the cottage cheese in a fine-mesh sieve set over a bowl and let it sit for at least 30 minutes, or even longer, to allow excess liquid to drain away. Gently press down on the curds with a spoon to encourage more liquid to escape. Discard the drained liquid.1 ½ cups full-fat cottage cheese
- Transfer the well-drained cottage cheese to a high-powered blender or food processor. Add the unsweetened cocoa powder, powdered sweetener, milk, vanilla extract, and a pinch of salt. - Blend the ingredients on high speed until the mixture is completely smooth and there are no visible lumps of cottage cheese. This might take a few minutes. Scrape down the sides of the blender or food processor as needed to ensure everything is incorporated. The goal is a velvety, pourable consistency, similar to thick chocolate pudding.
- Carefully taste the mixture and adjust the sweetness or cocoa powder if desired. Remember that the flavour will become slightly less intense once frozen, so it's better to err on the side of slightly sweeter before freezing.
- Pour the chocolate mixture into a freezer-safe container. Cover the container tightly.
- For the creamiest result without an ice cream maker, you'll want to break up the ice crystals as they form. Place the container in the freezer and freeze for about 45-60 minutes, or until the edges are starting to solidify. Remove the container from the freezer and stir the mixture vigorously with a fork or spoon, breaking up any ice crystals. Return to the freezer. Repeat this stirring process every 45-60 minutes for at least 3-4 hours, or until the ice cream has reached your desired firm but scoopable consistency. This manual churning prevents large ice crystals from forming, resulting in a much smoother ice cream.
- If you have an ice cream maker, follow the manufacturer's instructions for churning. Pour the blended mixture into your pre-chilled ice cream maker bowl and churn until it reaches a soft-serve consistency. Then, transfer to a freezer-safe container and freeze for a few hours to firm up.
