Ingredients
  

  • 2 large cucumbers thinly sliced (about 4 cups)
  • 1/2 medium red onion thinly sliced
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • A pinch garlic powder Optional

Method
 

  1. Wash and thinly slice the two large cucumbers. For a cleaner taste and to reduce excess moisture that can dilute the dressing, you can optionally salt the cucumber slices. Place them in a colander, sprinkle with about 1/2 teaspoon of salt, and let them sit for about 15-20 minutes. This process, called "sweating," draws out excess water. After 15-20 minutes, rinse the cucumber slices thoroughly under cold water and pat them very dry with paper towels.

  2. Wash and thinly slice the half medium red onion. If you find raw red onion too pungent, you can soak the sliced onion in ice water for about 10 minutes, then drain and pat dry. This helps to mellow its sharp flavor.

  3. In a medium-sized bowl, combine the sour cream and mayonnaise. Stir these together until they are well incorporated and form a smooth, creamy base.

  4. To the sour cream and mayonnaise mixture, add the chopped fresh dill, white vinegar, and granulated sugar. Stir in the salt and black pepper. If you enjoy a subtle hint of garlic, you can add a pinch of garlic powder at this stage. Mix everything thoroughly until all the ingredients are evenly distributed and the dressing is smooth. Taste the dressing and adjust salt, pepper, or sugar as needed.

  5. Gently add the prepared cucumber slices and red onion slices to the bowl with the creamy dressing.

  6. Using a spoon or spatula, carefully toss the cucumbers and onions with the dressing, ensuring that every slice is generously coated. Be gentle to avoid breaking the cucumber slices.
