Ingredients
  

  • 1 lb boneless, skinless chicken breast cut into bite-sized pieces
  • 1/4 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

  • to taste freshly ground black pepper
  • 1 large egg lightly beaten
  • 1/2 cup panko breadcrumbs (or regular breadcrumbs)
  • 1 tablespoon olive oil (optional, for extra crispiness)
  • 4 large flour tortillas (burrito-sized)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup marinara sauce (or your favorite tomato sauce)

Method
 

  1. In a medium bowl, combine the flour, paprika, garlic powder, onion powder, salt, and pepper. Mix well. In a separate shallow dish, whisk the egg. In a third shallow dish, place the panko breadcrumbs.

  2. Dredge each piece of chicken in the flour mixture, shaking off any excess. Then, dip it into the beaten egg, allowing any excess to drip off. Finally, coat the chicken thoroughly with the panko breadcrumbs, pressing gently to help them adhere. If you desire extra crispiness, you can lightly spray or toss the coated chicken with olive oil at this stage.

  3. Preheat your air fryer to 400°F (200°C). Arrange the coated chicken pieces in a single layer in the air fryer basket, ensuring not to overcrowd it. You may need to cook in batches.
  4. Air fry for 10-12 minutes, flipping halfway through, until the chicken is golden brown, crispy, and cooked through (internal temperature reaches 165°F or 74°C).

  5. While the chicken is cooking, gently warm the flour tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side, or wrap them in a damp paper towel and microwave for 20-30 seconds until pliable.

  6. Lay out a warm tortilla. Spread a thin layer of marinara sauce down the center of the tortilla. Top with a portion of the crispy air fryer chicken pieces. Sprinkle generously with shredded mozzarella cheese.

  7. Fold in the sides of the tortilla and then roll it up tightly from the bottom. For melted cheese, you can briefly return the assembled wraps to the air fryer for 1-2 minutes at 350°F (175°C), or place them seam-side down in a lightly greased skillet over medium-low heat for a few minutes until the cheese is melted and the tortilla is lightly golden.
