Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Wash the Brussels sprouts, trim the tough ends, remove any loose outer leaves, and cut each sprout in half lengthwise (quarter larger ones).

  3. In a large mixing bowl, combine the trimmed Brussels sprouts with the olive oil. Toss well until all sprouts are lightly coated.

  6. Roast for 20-25 minutes, or until tender on the inside with deep golden-brown, crispy edges. Halfway through, give them a gentle toss and flip.
  7. Remove from oven. If desired, sprinkle with fresh chopped parsley. Serve immediately while warm and crispy.
