Method
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Wash the Brussels sprouts, trim the tough ends, remove any loose outer leaves, and cut each sprout in half lengthwise (quarter larger ones).1.5 lbs fresh Brussels sprouts
- In a large mixing bowl, combine the trimmed Brussels sprouts with the olive oil. Toss well until all sprouts are lightly coated.1.5 lbs fresh Brussels sprouts, 3 tablespoons olive oil
- Add the grated Parmesan cheese, garlic powder, onion powder, black pepper, and salt (and red pepper flakes, if using). Toss thoroughly until the Brussels sprouts are evenly coated with the cheese and spices.1/2 cup grated Parmesan cheese, 1 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon black pepper, 1/4 teaspoon salt, Pinch red pepper flakes
- Spread the seasoned Brussels sprouts in a single layer on the prepared baking sheet, ensuring they are not overcrowded. Place cut-side down for best crisping.
- Roast for 20-25 minutes, or until tender on the inside with deep golden-brown, crispy edges. Halfway through, give them a gentle toss and flip.
- Remove from oven. If desired, sprinkle with fresh chopped parsley. Serve immediately while warm and crispy.1 tablespoon fresh parsley
Notes
For an extra touch of flavor, a squeeze of lemon juice after roasting brightens the dish. Ensure sprouts are completely dry before seasoning for maximum crispness!
