Ingredients
  

Vegetables & Cheese
  • 1 Large Tomato Cut into fourths
  • 8 oz Fresh Mozzarella Balls (Bocconcini) Drained
  • 1 cup Marinated Artichoke Hearts Drained, reserve liquid if desired for dressing
  • 1 cup Small Pearl Onions Pickled, drained
Cured Meats & Olives
  • 6 slices Genoa Salami Rolled or folded
  • 6 slices Pepperoni Rolled or folded
  • 12 Kalamata Olives Pitted
  • 12 Green Olives Stuffed with Pimento Pitted
Dressing & Garnish
  • 1/4 cup Balsamic Glaze For drizzling
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tsp Dried Oregano

Method
 

Instructions
  1. Prepare all ingredients by chopping vegetables into bite-sized pieces suitable for skewering and rolling/folding meats.
  2. If using wooden skewers, soak them in water for at least 15 minutes to prevent burning or splintering.
  3. Assemble the skewers by alternating ingredients for visual appeal. A good pattern is: Olive, Salami, Mozzarella, Artichoke Heart, Pepperoni, Tomato, Pearl Onion. Repeat as needed to fill the skewer.
  4. Arrange the completed skewers on a large serving platter.
  5. In a small bowl, whisk together the olive oil and dried oregano. Lightly brush or drizzle this mixture over the skewers for added flavor.
  6. Finish by drizzling the thick balsamic glaze generously over all the skewers just before serving.

Notes

These skewers are best assembled within an hour of serving. For an extra kick, add a piece of marinated roasted red pepper or a small cube of Provolone cheese to each one.
