- Place the grated cucumber in a fine-mesh sieve set over a bowl. Let it drain for at least 10 minutes to remove excess moisture. Gently press the cucumber with a spoon or your hands to squeeze out as much liquid as possible.
- In a medium bowl, combine the softened cream cheese, drained cucumber, chopped fresh dill, minced garlic (if using), salt, and pepper.
- Mix all the ingredients together until well combined and smooth. You can use a fork, a spatula, or an electric mixer on low speed.
- Taste and adjust seasonings if necessary. Add more salt, pepper, or dill according to your preference.
- Transfer the spread to a serving dish. For best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- Serve chilled with crackers, bread, bagel chips, or as a sandwich spread. Garnish with extra dill if desired.
Notes
For a firmer spread, you can add a bit more cream cheese. If you prefer a lighter spread, you can substitute some of the cream cheese with Greek yogurt. Ensure the cucumber is well-drained to prevent a watery spread.
