  • 1 large cucumber peeled, seeded, and finely grated
  • 8 oz cream cheese softened
  • 2 tablespoons fresh dill finely chopped
  • 1 clove garlic minced (optional)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper freshly ground

  1. Place the grated cucumber in a fine-mesh sieve set over a bowl. Let it drain for at least 10 minutes to remove excess moisture. Gently press the cucumber with a spoon or your hands to squeeze out as much liquid as possible.
  2. In a medium bowl, combine the softened cream cheese, drained cucumber, chopped fresh dill, minced garlic (if using), salt, and pepper.
  3. Mix all the ingredients together until well combined and smooth. You can use a fork, a spatula, or an electric mixer on low speed.
  4. Taste and adjust seasonings if necessary. Add more salt, pepper, or dill according to your preference.
  5. Transfer the spread to a serving dish. For best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve chilled with crackers, bread, bagel chips, or as a sandwich spread. Garnish with extra dill if desired.

Notes

For a firmer spread, you can add a bit more cream cheese. If you prefer a lighter spread, you can substitute some of the cream cheese with Greek yogurt. Ensure the cucumber is well-drained to prevent a watery spread.
