Ingredients
  

For the Bites
  • 2 large English cucumbers Washed and sliced into 1/2-inch thick rounds
  • 1 cup Classic Hummus Store-bought or homemade
  • 1/4 cup Red Bell Pepper Finely diced
  • 2 tablespoons Fresh Parsley Chopped
  • 1 teaspoon Smoked Paprika For garnish
  • 1/4 teaspoon Everything Bagel Seasoning Optional, for extra crunch

Method
 

Instructions
  1. Prepare the cucumbers by washing them thoroughly and slicing them into 1/2-inch thick rounds. Pat the cucumber slices dry with a paper towel to prevent them from getting soggy.
  2. Prepare the toppings by finely dicing the red bell pepper and roughly chopping the fresh parsley.
  3. Arrange the dried cucumber rounds single layer on a serving platter.
  4. Using a small spoon or piping bag, place approximately 1-2 teaspoons of hummus onto the center of each cucumber slice, spreading it slightly.
  5. Top each hummus-coated cucumber bite with a small pinch of the diced red bell pepper and chopped fresh parsley.
  6. Finish by lightly dusting the bites with smoked paprika and, if desired, a sprinkle of Everything Bagel Seasoning for texture.
  7. Serve immediately for the best texture, or chill in the refrigerator for up to 30 minutes before serving.

Notes

For an added protein boost, mix 1/4 cup of finely crumbled feta cheese into the hummus before spreading. Do not prepare more than 1 hour in advance, as the cucumbers may release too much water.
