- Prepare the cucumbers by washing them thoroughly and slicing them into 1/2-inch thick rounds. Pat the cucumber slices dry with a paper towel to prevent them from getting soggy.
- Prepare the toppings by finely dicing the red bell pepper and roughly chopping the fresh parsley.
- Arrange the dried cucumber rounds single layer on a serving platter.
- Using a small spoon or piping bag, place approximately 1-2 teaspoons of hummus onto the center of each cucumber slice, spreading it slightly.
- Top each hummus-coated cucumber bite with a small pinch of the diced red bell pepper and chopped fresh parsley.
- Finish by lightly dusting the bites with smoked paprika and, if desired, a sprinkle of Everything Bagel Seasoning for texture.
- Serve immediately for the best texture, or chill in the refrigerator for up to 30 minutes before serving.
Notes
For an added protein boost, mix 1/4 cup of finely crumbled feta cheese into the hummus before spreading. Do not prepare more than 1 hour in advance, as the cucumbers may release too much water.
